Shrimp & Noodles
INGREDIENTS
- 5 ea 16-20 ct shrimp
- 3 ea Chinese shitake quartets
- 10 ea snow peas (strings removed)
- ½ cp basil sweet chili sauce
- 1 tbs Asian herb salad
- 1 ½ cp fresh lomen noodles
- Scallions sliced on steep bias
INSTRUCTIONS
- sear shrimp in a small amount of oil, cook till all pink and remove from pan
- cook the mushrooms in the same pan till softened ( more oil may be needed )
- cook Lomen noodles in boiling water till tender
- Add basil sweet chili sauce, peas, Asian herbs, and shrimp to hot pan and stir to combine.
- Strain off noodles and add to pan toss all to combine.
- To plate place shrimp around the perimeter of a plate. Mound the noodle mixture in the center of the plate and garnish with sliced scallions.
Asian herb salad
- 1 tbs cilantro
- 1 tbs Thai basil
- 1 tbs mint
Cut coarsely and mix.
Basil Sweet chili sauce
- 1 ea bottle Mai poi Thai sweet chili sauce
- 1 cp picked Thai basil leaves
Combine in a blender and blend till smooth.
