Shrimp & Noodles

INGREDIENTS

  1. 5 ea 16-20 ct shrimp
  2. 3 ea Chinese shitake quartets
  3. 10 ea snow peas (strings removed)
  4. ½ cp basil sweet chili sauce
  5. 1 tbs Asian herb salad
  6. 1 ½ cp fresh lomen noodles
  7. Scallions sliced on steep bias

INSTRUCTIONS

  1. sear shrimp in a small amount of oil, cook till all pink and remove from pan
  2. cook the mushrooms in the same pan till softened ( more oil may be needed )
  3. cook Lomen noodles in boiling water till tender
  4. Add basil sweet chili sauce, peas, Asian herbs, and shrimp to hot pan and stir to combine.
  5. Strain off noodles and add to pan toss all to combine.
  6. To plate place shrimp around the perimeter of a plate. Mound the noodle mixture in the center of the plate and garnish with sliced scallions.

Asian herb salad

  1. 1 tbs cilantro
  2. 1 tbs Thai basil
  3. 1 tbs mint

Cut coarsely and mix.

Basil Sweet chili sauce

  1. 1 ea bottle Mai poi Thai sweet chili sauce
  2. 1 cp picked Thai basil leaves
Combine in a blender and blend till smooth.
